I'm wondering about dropping the black orcs' shields in favour of more bodies. Just concerned about survivability to help them actually get into combat.

I think he's an option but Grimgor is a valid choice for this sort of list, fluff-wise. The "Grimgor's Ard Boyz" army list (in the Storm of Chaos book) was pretty much the same choices as Phil has taken: Black Orcs, Boar Boyz and Big'Unz, with very few Shamans.

you can only have 1 mangler. they are unique models. on the topic of bases for them I think a Chariot base, used sideways may be a good option...its 2 giant cave squigs chained together so isn't the single rideable one on a 40 x 40mm base?

Possibly true, but it's nothing to do with tactics in this case: The reason for my huge unit is that I wanted an army comprising only the kind of troops an elitist Black Orc would approve of (hence big'uns and boar boyz - the mangler squigs are theme-driven counts-as conversions). As you can only have one unit of big'uns, that's my only core option so it has to be big enough to cost 25% of the army total (hence the most expensive banner they're allowed!).

Really? Doesn't that mean you could only ever have one night goblin fanatic as they're listed as 'unique' as well?! I think it just means they're a unique troop type (rather than infantry, cavalry etc.).
